Chocolate begins with the cacao tree, which grows in tropical regions near the equator. Farmers harvest large cacao pods that grow directly on the trunk and branches. Inside each pod are cacao beans surrounded by a sweet white pulp. The pods are split open by hand, and the beans are removed and placed into large containers for fermentation. During fermentation, natural yeast and bacteria break down the pulp, developing the deep chocolate flavor we recognize later. After several days, the beans are spread out in the sun to dry. This reduces moisture and prepares them for transport. Once dried, they are shipped to chocolate factories, where they are roasted at controlled temperatures. Roasting enhances flavor and removes any remaining bitterness. Next, the shells are removed, leaving behind cacao nibs. These nibs are ground into a thick paste called chocolate liquor, which contains both cocoa solids and cocoa butter. The liquor can be pressed to separate cocoa butter from cocoa powder, depending on the final product. To make chocolate bars, the mixture is refined, sweetened with sugar, and often combined with milk. The chocolate is then conched, a process of mixing and smoothing that improves texture. Finally, it is tempered by carefully heating and cooling it, which makes it glossy and snaps cleanly. After molding and cooling, the chocolate is packaged and ready to eat.
