In every file, accuracy is key.  You would be typing full transcriptions and 'full' means exactly that: word-for-word, with the occasional permitted omission.  We don’t want to be too brutal with taking anything out as the idea of full files is to ensure they’re typed word for word and everything is captured.  However, in the interest of having a cleaner transcript, you may omit unnecessary false starts, hesitations, interruptions and repetitions if nothing is lost.  Also, the occasional filler words, such as ‘you know’ or ‘sort of’ can be removed if these are used liberally and are disrupting the flow of speech.
